There are times when I just want to make a small batch of muffins or cookies. And, there are some recipes that call for exact ingredients, I just can't use my pinch and dump method. 3 eggs<br />
2 cups white sugar<br />
1 cup vegetable oil<br />
1/3 cup unsweetened cocao powder<br />
1 1/2 tsp vanilla extract<br />
2 cups grated zucchini<br />
3 cups flour<br />
1 tsp baking soda<br />
1 tsp baking powder<br />
1 tsp salt<br />
1/4 tsp ground cinnamon<br />
1/4 tsp ground nutmeg<br />
1/4 tsp ground cloves<br />
1/4 tsp ground cardamon<br />
Preheat oven to 350 degrees F. Lightly grease or line 18 muffin cup tins with paper liners.<br />

By hand, in a large bowl beat the eggs. Beat in the sugar and oil. Add the cocoa, vanilla, zucchini and stir well.<br />
<br />
Stir in the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves and cardamon. Mix until moist.<br />
<br />
Pour batter into prepared muffin tins fill to top. Bake 350 degrees F for 20 - 25 minutes. Do not over bake. Remove from pan and let cool on a wire rack. I have made this recipe over 35 years and it never fails to please everyone.<br />
It makes big fluffy waffles that are crispy on the outside. Always serve with fresh New York State Maple Syrup.<br />

2 1/4 cups flour<br />
4 tsp baking powder<br />
3/4 tsp salt<br />
2 Tbsp sugar<br />
2 beaten eggs<br />
2 1/4 cups milk<br />
3/4 cup canola oil<br />
Mix all dry ingredients well. Combine all wet ingredients and add to the dry.<br />
Don't over mix, the batter will be thin.<br />
I have a well seasoned Belgian waffle maker so I do not have to spray.<br />
Top with blueberries or other fresh fruit of your choice, and always NYS Maple syrup.<br />
